Here is a simple recipe for chana masala:

2 cups of chickpeas (canned or
cooked)
·
2 tablespoons of oil
·
1 onion, finely chopped
·
2 garlic cloves, minced
·
1 tablespoon of grated ginger

1 teaspoon of ground cumin
·
1 teaspoon of turmeric
·
1/2 teaspoon of cayenne pepper
(optional)
·
1 teaspoon of garam masala
·
1 can of diced tomatoes
·
1/2 cup of water
·
Salt, to taste
·
Cilantro, chopped for garnish
1. Heat the oil in a large skillet
over medium heat.
2.
Add the chopped onions and sauté
until they are soft and translucent.
3.
Add the minced garlic and grated
ginger, and cook for another minute.
4.
Add the ground coriander, cumin,
turmeric, cayenne pepper (if using), and garam masala, and stir until the
spices are fragrant.
5.
Add the can of diced tomatoes
and the chickpeas, and stir to combine.
6.
Add the water and bring the
mixture to a simmer.
7.
Reduce the heat to low and let
the mixture simmer for about 10-15 minutes, or until the sauce has thickened
and the chickpeas are tender.
8.
Add salt to taste.
9.
Serve the chana masala hot,
garnished with chopped cilantro.
Note: You can adjust
the spices to your liking, and you can also add other vegetables like spinach
or potatoes to the dish if you like.
