v    Rinse the rice under cold water until the water runs clear, then drain well.

v    In a medium saucepan, heat the oil or butter over medium heat.

v    Add the onion and garlic and sauté until translucent, about 5 minutes.

v    Add the rice and sauté for 2-3 minutes, stirring frequently, until lightly toasted.

v    Add the broth, cumin, coriander, salt, and pepper to the pot and stir to combine.

v    If using vegetables or meat, add them now.

v    Bring the mixture to a boil, then reduce the heat to low and cover the pot.

v    Simmer for 18-20 minutes, or until the liquid has been absorbed and the rice is tender.

v    Remove from heat and let sit for 5 minutes, then fluff the rice with a fork.

v    Serve hot, garnished with fresh herbs if desired.
