  "Baisan roti" is a type of flatbread or roti made from besan or gram flour, which is a type of flour made from ground chickpeas. Baisan roti is made by mixing besan flour with water, oil, and spices, and then rolling the dough into thin flatbreads. It is typically served with curries, chutneys, or pickles. Here's a simple recipe for Baisan Roti:

Ingredients:

  • ·       1 cup besan (gram flour)
  • ·       1/4 tsp salt
  • ·       1/4 tsp ajwain (carom seeds)
  • ·       1/4 tsp red chili powder (optional)
  • ·       1/4 tsp turmeric powder
  • ·       1/2 cup water
  • ·       1 tbsp oil for dough + extra for cooking rotis

Recipe:

1.        In a large mixing bowl, add besan, salt, ajwain, red chili powder (if using) and turmeric powder. Mix everything together.


2.      Add 1 tbsp of oil and mix again. Gradually add water and knead into a smooth and soft dough. Cover and let it rest for 10-15 minutes.


3.      Divide the dough into small portions and roll them into balls. Flatten each ball and dust it with dry besan.


4.       Roll each ball into a thin circle, about 1/4 inch thick.


5.      Heat a non-stick pan or tawa over medium-high heat. Once the pan is hot, place the rolled out roti on the pan.


6.      Cook the roti for about 1-2 minutes on one side or until small bubbles appear on the surface. Flip it over and cook for another 1-2 minutes or until golden brown spots appear on both sides.


7.       Apply a little oil on both sides and cook for another 30-40 seconds or until crisp.

8.      Remove from the pan and serve hot with your favorite curry or chutney.
