500 grams mutton, cut into
pieces
·
4 onions, thinly sliced
·
2 tomatoes, finely chopped
·
2 teaspoons ginger-garlic
paste
·
2 green chilies, slit
·
1 teaspoon cumin seeds
·
1 teaspoon turmeric powder
·
1 teaspoon red chili powder
·
1 teaspoon coriander powder
·
1/2 teaspoon garam masala
powder
·
1/4 cup plain yogurt
·
3 tablespoons oil or ghee
·
Salt to taste
·
Fresh coriander leaves for
garnishing
Instructions

Heat oil or ghee in a large
pan or pressure cooker over medium heat.

Add cumin seeds and let them
splutter. Then, add sliced onions and sauté until golden brown.

Add ginger-garlic paste and
green chilies. Sauté for a minute until the raw smell disappears.

Add mutton pieces to the pan
and cook on high heat until they are browned on all sides. Stir occasionally to
ensure even cooking.

Reduce the heat to low and
add turmeric powder, red chili powder, coriander powder, and salt. Mix well to
coat the mutton with the spices.

Add chopped tomatoes and
cook until they turn soft and mushy.

In a separate bowl, whisk
the yogurt until smooth. Add the whisked yogurt to the pan and mix well.

Cover the pan or pressure
cooker with a lid and cook for about 30-40 minutes until the mutton is tender.
If using a pressure cooker, cook for about 5-6 whistles.

Once the mutton is cooked,
remove the lid and cook on medium heat for a few more minutes until the gravy
thickens.
10.
Sprinkle garam masala powder
and give it a final stir.
11.
Garnish with fresh coriander
leaves.
