Make the best chicken shawarma at home with this easy and flavorful Middle Eastern recipe. Tender chicken marinated in aromatic spices, served with creamy tahini sauce, and wrapped in a warm pita bread.

· 1 lb boneless, skinless chicken thighs
· 1/4 cup olive oil
· 1 tsp cumin
· 1 tsp paprika
· 1 tsp turmeric
· 1/2 tsp garlic powder
· 1/2 tsp onion powder
· 1/4 tsp cinnamon
· 1/4 tsp cayenne pepper
· Salt and pepper to taste
· 1/2 cup plain yogurt
· 1/4 cup lemon juice
· 2 cloves garlic, minced
· Pita bread, for serving
· Chopped tomatoes, cucumbers, and parsley, for serving
· Tahini sauce, for serving

1. In a large bowl, whisk together the olive oil, cumin, paprika, turmeric, garlic powder, onion powder, cinnamon, cayenne pepper, salt, and pepper.
2. Add the chicken thighs to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 1 hour or up to overnight.
3. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
4. Arrange the marinated chicken on the baking sheet and bake for 20-25 minutes, or until cooked through and golden brown.
5. While the chicken is cooking, make the tahini sauce by whisking together the yogurt, lemon juice, minced garlic, and salt in a small bowl.
6. To assemble the shawarma, warm the pita bread in the oven or on the stovetop. Slice the cooked chicken into strips and place them on top of the warmed pita bread. Top with chopped tomatoes, cucumbers, parsley, and tahini sauce.
7. Roll up the pita bread and serve immediately.
