Aaloo Palak - The Dish Diary

Ingredients:

·                4 medium-sized potatoes, peeled and chopped into small cubes

·                4 cups fresh spinach leaves, washed and chopped

·                1 medium-sized onion, finely chopped

·                1 tablespoon garlic paste

·                1 tablespoon ginger paste

·                1 teaspoon cumin seeds

·                1 teaspoon coriander powder

·                1/2 teaspoon turmeric powder

·                1/2 teaspoon red chili powder (adjust to taste)

·                Salt to taste

·                2 tablespoons vegetable oil

·                Water as needed

Instructions:

1.                    Heat oil in a deep frying pan or kadai over medium heat.

2.                  Add cumin seeds and let them splutter. Then add the chopped onions and fry until they turn translucent.

3.                  Add garlic and ginger paste, and fry for another minute.

4.                   Add chopped potatoes, coriander powder, turmeric powder, red chili powder, and salt. Mix well and sauté for 3-4 minutes.

5.                  Add 1/2 cup of water and mix well. Cover the pan and cook the potatoes until they are tender, stirring occasionally. Add more water if needed.

6.                  Once the potatoes are cooked, add the chopped spinach leaves and mix well. Cook for another 5-7 minutes until the spinach is wilted and cooked.

7.                   Adjust salt and spices as per taste.

8.                  Serve hot with steamed rice or Indian bread like roti, paratha or naan.
