Beef Paya | Beef Trotters
Beef paya, also known as beef
trotters, is a popular South Asian dish made from the feet of cows or
buffaloes. The feet are cleaned, boiled, and simmered with various spices and
herbs until they become tender and flavorful. The resulting broth is rich and gelatinous
due to the natural collagen and cartilage in the bones and feet.
Beef paya is a nutritious dish that is often served as a hearty breakfast or lunch. It is especially popular in Pakistan and India, where it is believed to have medicinal properties and is often eaten to improve joint health and digestion. 4-6 beef paya (trotters),
cleaned and cut into pieces
·
1 large onion, sliced
·
1 tablespoon ginger paste
·
1 tablespoon garlic paste
·
2-3 tablespoons ghee or oil
·
1 cinnamon stick
·
4-5 cloves
·
4-5 cardamom pods
·
1 tablespoon coriander powder
·
1 tablespoon cumin powder
·
1 teaspoon turmeric powder
·
1 teaspoon red chili powder
(adjust to taste)
·
Salt to taste
·
8-10 cups water
·
2 tablespoons chopped fresh
coriander leaves (cilantro)
·
2 tablespoons chopped fresh mint
leaves
·
2-3 green chilies, sliced
(optional)
·
Lemon wedges for garnish

Recipe – The Dish Diary
1.
Clean and wash the beef paya
(trotters) thoroughly, then soak them in water for 2-3 hours.
2.
Heat ghee or oil in a pressure
cooker or a large pot over medium-high heat. Add sliced onions and fry until
they turn golden brown.
3.
Add ginger paste and garlic
paste, and fry for another minute.
4.
Add cinnamon stick, cloves, and
cardamom pods, and fry for a minute until fragrant.
5.
Add coriander powder, cumin
powder, turmeric powder, red chili powder, and salt. Mix well and fry for 2-3
minutes.
6.
Add the beef paya (trotters) to
the pot, and mix well with the spices. Cook for 5-7 minutes.
7.
Add enough water to cover the
paya, and bring the mixture to a boil. Reduce heat to low, cover the pot, and
let the paya simmer for 4-5 hours, or until they become tender and the broth
thickens.
8.
Once the beef paya is cooked,
garnish with fresh coriander leaves, mint leaves, and green chilies. Serve hot
with naan or roti, and lemon wedges on the side.
