·                4 cups of all-purpose flour

·                1 1/2 tsp of instant yeast

·                1 1/2 tsp of salt

·                2 tbsp of olive oil

·                1 1/2 cups of warm water

Ingredients for the filling:

·                250g of ground lamb or beef

·                1 medium onion, finely chopped

·                1 medium tomato, finely chopped

·                1/2 green bell pepper, finely chopped

·                1/2 red bell pepper, finely chopped

·                1/4 cup of chopped fresh parsley

·                2 tbsp of tomato paste

·                2 tbsp of olive oil

·                Salt and pepper to taste

Full Recipe - The Dish Diary


1.              In a large bowl, mix the flour, yeast, and salt. Add the olive oil and warm water, and stir until a soft dough forms.

2.            Turn the dough out onto a floured surface and knead for 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a clean towel, and let it rise for 1 hour in a warm place.

3.            Meanwhile, prepare the filling. Heat the olive oil in a pan over medium heat. Add the onion and sauté until soft and translucent. Add the ground meat and cook until browned, breaking it up into small pieces with a wooden spoon.

4.            Add the tomato, green and red bell peppers, and tomato paste to the pan. Stir well and cook for 5 minutes until the vegetables are tender. Season with salt and pepper to taste, and stir in the chopped parsley. Remove the pan from heat and let the mixture cool.

5.            Preheat the oven to 425°F (220°C). Divide the dough into four equal parts and shape them into oval shapes, about 1/4 inch thick. Place the dough on a baking sheet lined with parchment paper.

6.             Spoon the cooled filling onto the center of each dough oval, leaving about 1 inch of space around the edges.

7.             Fold the edges of the dough over the filling to form a boat shape. Brush the edges of the dough with olive oil.

8.            Bake the pide for 15-20 minutes, or until the edges are golden brown and the dough is cooked through. Serve hot.
