Here's a classic recipe for Spaghetti Carbonara:

Ingredients:

6 ounces pancetta or bacon, diced
1 pound spaghetti














1 cup freshly grated Parmesan cheese

4 large eggs













 

1/4 teaspoon freshly ground black pepper

Salt to taste

1.             Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, following package instructions. Drain and reserve 1 cup of pasta water.

2.             While the pasta is cooking, fry pancetta or bacon in a large skillet over medium heat until crisp and golden brown. Remove with a slotted spoon and set aside.

3.             In a medium bowl, whisk together eggs, Parmesan cheese, and black pepper.

4.             Add the cooked spaghetti to the skillet with the pancetta or bacon and toss to combine.

5.             Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing vigorously to coat the spaghetti with the sauce. Add a little reserved pasta water, as needed, to help create a creamy sauce.

6.             Serve immediately, garnished with additional Parmesan cheese and black pepper.
